Apple Carrot Kugel

Although kugels are typically a side dish, this one is more like a dessert or a breakfast treat,

Ingredients:

1 cup grated carrot
1 cup grated sweet potato
1 cup grated apple
2 eggs
8 dates
1/3 cup of orange juice
2 cups blanched almond flour
1 tsp baking soda
1/3 tsp salt

Preparation:

  • Preheat oven to 325.F
  • Blend eggs,dates, baking soda, orange juice and 1 cup of almond flour until smooth.
  • Transfer into a  bowl and mix in the rest of the ingredients.
  • Pour into a greased 8×8 and bake for 40 minutes at 325.
  • Serve cold or warm

    Lots of work for prepping recipe but proud U did it although something went wrong because they never seemed to bake all the way through. Seemed very raw even after cooking them longer than indicated a second time.

      bummer. But remember that it is not a cake , it’s a kugel so it is very moist
